INGREDIENTS1 1/2 cups flour1/2 tablespoon baking powder1/4 cup sugarpinch of salt1 egg1 1/2 teaspoons cinnamon3 tablespoons softened butterzest of 1/2 a lemon1/2 teaspoon vanillavegetable oil for fryingpowder sugar for rollingPREPARATIONIn a large bowl whisk together flour, baking powder, salt and cinnamon. Make a well in the middle and add sugar, eggs, softened butter, lemon zest and vanilla. Mix together with hands to form a soft and smooth dough. Cutting a piece of dough at a time, roll the dough to form a 1 inch thick rope. Cut the rope in pieces the size of large cherries and roll between your hands to form balls.Meanwhile, start heating the oil (in a large fryer or deep pot). Fry a few castagnole at a time, until they are golden brown and nicely puffed. Approx. 2 minutes. Turn them often while frying, so they brown on all sides. Drain on paper towels, when cooled roll them in powder sugar.
